Cranberry Breakfast Spread

For a festive holiday breakfast, serve a wedge of Brie with a spoonful of cranberry spread, slices of kiwi fruit and a French baguette. It is easy and delicious.

Ingredients

2/3 cup cranberry juice
1/2 cup GOLDEN BLOSSOM HONEY
1 3/4 cups cranberries
1 teaspoon lemon zest
1/2 lemon, peeled and cut into sections
1/2 cup dried cranberries
1/8 teaspoon ground allspice

Directions

Combine cranberry juice and honey in a medium saucepan. Bring to a boil, stirring. Add remaining ingredients. Return to a boil and simmer until cranberries begin to pop and mixture thickens, about 15 minutes, stirring occasionally. Remove from heat, cool and then refrigerate. Spread will thicken more when chilled.
