Salmon with Pomegranate Sauce

Turn a simple salmon preparation into a very special presentation. Healthful and delicious!

Ingredients

Sauce:
1 cup pomegranate juice
1/2 cup GOLDEN BLOSSOM HONEY

4 (6 ounce) salmon portions, grilled or broiled
4 cups fresh baby spinach leaves

Directions

In a small saucepan combine juice and honey. Bring to a boil, reduce heat and simmer for about 15 minutes until sauce is reduced by half. Remove from heat and cool. Can be refrigerated for up to 3 days.

To serve place 1 cup of spinach leaves on each plate. Top with cooked salmon and drizzle with pomegranate sauce.
