Breakfast Baked Apples


There is nothing like the aroma of apples baking early in the morning. Serve these with a bowl of vanilla yogurt or hot steaming oatmeal.

Ingredients

4 large Golden Delicious apples
Filling
1/2 cup walnuts
1/4 cup dried cranberries or raisins
1/8 cup coconut, optional
1 tablespoon GOLDEN BLOSSOM HONEY
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg

4 tablespoons GOLDEN BLOSSOM HONEY

1 tablespoon butter
3/4 cup apple juice or apple cider

Directions

Preheat oven to 375°.


Wash and core apples leaving 1/2 inch of the bottom of the apple. Set into a 2-quart casserole dish.

Place all of the filling ingredients in a food processor. Process until finely chopped. Spoon the filling into the cored apples. Top each with 1 tablespoon of honey.

In a small pan heat butter and apple juice until butter melts. Pour into dish around apples. Cover with foil and bake covered for 30 minutes. Uncover and bake about 10 –20 more minutes, basting with juices often, until apples are just fork tender.

Serve apples warm topped with warm pan juices.
