Fresh Almond Milk

Serve this nutritious nut milk chilled, as a refreshing beverage any time of the day or use it as a base for smoothies or even to lighten your morning coffee.

Ingredients

1/2 cup blanched almonds, without skins and not salted
3 cups water
3 tablespoons GOLDEN BLOSSOM HONEY
small drop of almond extract
dash of cinnamon or nutmeg, if desired

Directions

Place almonds and water into a blender. Blend on high for 5 minutes. Strain through a fine sieve or cheesecloth to remove any almond particles. Pour milk into a medium saucepan, add honey and bring to a boil. Remove from heat to cool. Stir in almond extract. Refrigerate until very cold. (Milk thickens as it cools.)

To serve, pour desired amount into glass and dust with a little cinnamon or nutmeg.
