Poached Figs Over Ice Cream

Spoon these warm poached figs with their hint of fresh thyme over vanilla ice cream. A simple but impressive dessert.

Ingredients

1 cup dry white wine
1/2 cup apple juice
3 tablespoons GOLDEN BLOSSOM HONEY
1 teaspoon fresh thyme leaves
1/4 teaspoon vanilla extract
1 (6 ounce) package dried Calimyrna figs, stemmed and quartered (found in raisin or bulk section of your market)
vanilla ice cream

Directions

In a saucepan combine wine, apple juice, honey and thyme. Bring to a boil. Simmer for 3 minutes. Add vanilla and figs. Simmer over a low heat for 5 minutes.

May be made 24 hours ahead. Warm before serving and spoon over ice cream.
