Salmon with Tarragon

In this recipe, tarragon and panko breadcrumbs add a new dimension to the succulent salmon.

Ingredients

4 (6 ounce) salmon fillets
2 tablespoons butter
salt and pepper to taste
3 tablepoons GOLDEN BLOSSOM HONEY, slightly warmed
2 tablespoons fresh tarragon, fnely chopped
1/4 cup panko bread crumbs

Directions

Preheat oven to 400°. Lightly coat a shallow pan with non-stick cooking spray.

Melt butter in a large skillet. Heat until butter is very hot but not smoking. Add salmon and quickly sear on all sides. You may have to do this in two batches to fit all the fillets in the skillet.

Remove from heat and place salmon in prepared pan. Season with salt and pepper.

Drizzle warmed honey over fish. Top with chopped tarragon and sprinkle bread crumbs over all. Bake approximately 10 minutes or until fish is just cooked through. Be careful not to over-bake, the time will vary according to how long you had to sear the fish.
