Blueberry-Apple Fruit Rolls

Making fruit leather is an easy and fun project for children to help with. It’s a nutritional natural fruit snack you can eat on the go.


2 cups fresh blueberries
2 cups Granny Smith apples, cut into thin slices
2 tablespoons fresh lemon juice
3 1/2 tablespoons GOLDEN BLOSSOM HONEY


Preheat oven to 170°. Line a 10-x15-inch jellyroll pan or rimmed cookie sheet with parchment paper.

In a large skillet heat blueberries, apple slices and lemon juice. Do not oil or butter pan. Bring fruit to a simmer and cook stirring occasionally on a low simmer about 20 minutes. Apples should be soft.

Place cooked fruit in a blender. Add honey and process until fruit is pureed and smooth. Pour onto prepared pan. Using the back of a spoon distribute the puree evenly over parchment paper into an even layer about 1/8-inch thick.

Bake approximately 5 hours or until sheet appears leathery, not sticky or soft.

Remove from oven and cool 5 minutes. Peel fruit leather from parchment paper and roll up jellyroll fashion. Using a knife or pizza cutter, cut jellyroll into strips. Store in an airtight container.

Yields: approximately one 10x15-inch sheet
