Sweet Potatoes


Ingredients

8 medium sweet potatoes (4 pounds)
1/2 cup GOLDEN BLOSSOM HONEY
2 Tablespoons grated orange rind
1/2 cup orange juice
4 Tablespoons butter or margarine
1/2 teaspoon cinnamon
1 dash of ginger
1/4 teaspoon salt

Directions

Cook unpeeled sweet potatoes until just tender. Peel and cut into ½-inch slices. Combine honey, orange rind, orange juice, butter, cinnamon, ginger and salt in a large skillet. Bring to a boil. Reduce heat and simmer 5 minutes. Add potatoes and simmer 5 minutes more, basting frequently with the sauce. Serves 8.
