Fruit and Vegetable Tsimmes

A traditional holiday recipe. It is quick, easy and be make in advance. Just reheat before serving.

Ingredients

1 large sweet potato, peeled and thinly sliced
4 carrots, peeled and thinly sliced
1/4 cup raisins
1/4 cup pitted prunes
1/4 cup pitted dates, chopped (optional)
1/4 cup dried apricots, chopped
1/4 cup orange juice
1 Tablespoon lemon juice
2 Tablespoon GOLDEN BLOSSOM HONEY
1 Tablespoon water
1/4 teaspoon salt
dash pepper

Directions

Preheat oven to 350°.

Place all ingredients in casserole dish. Cover and bake for 30-40 minutes, or until tender. Let stand, covered, for 10 minutes.

Serves: 4-5.
