Honey Orange Valencia Cake


Ingredients

3 cups cake flour
1/2 teaspoon salt
3 teaspoons baking powder
1 cup margarine, softened
1 3/4 cup sugar
6 eggs
1/2 cup milk
1/4 cup GOLDEN BLOSSOM HONEY
1 teaspoon vanilla
grated rind of one orange
Glaze:
1/2 cup orange marmalade
1/3 cup GOLDEN BLOSSOM HONEY
1 Tablespoon orange liqueur or orange juice

Directions

Preheat oven to 350°. Grease and flour a 10 inch tube pan. Sift together the flour, salt and baking powder. Using an electric mixer, cream the margarine with the sugar until light and fluffy. Add eggs one at a time and beat well after each addition. Mix in the milk, honey, vanilla and orange rind. Stir into the flour mixture until well combined. Pour batter into prepared pan and bake for 1 hour and 10 minutes, or until a cake tester inserted in center comes out clean. Cool cake on wire rack for 10 minutes. Remove cake from pan. While cake is still warm, brush with glaze to coat completely.

Glaze: In a small saucepan, heat marmalade and honey until dissolved. Strain out solids and add orange liqueur or orange juice.
