Butterflied Lamb

Celebrate Easter with this elegant and easy entree. The honey mustard sauce coats the lamb with a deliciously sweet and pungent glaze.

Ingredients

Have the butcher butterfly half a leg of lamb
Sauce:
1/2 cup Dijon mustard
1/2 cup country style Dijon mustard
1/4 cup GOLDEN BLOSSOM HONEY
4 tablespoons lemon juice

Directions

Combine all sauce ingredients. Set aside.

Brush lamb with oil and sprinkle with salt. Broil about 6 minutes. Turn and broil an additional 6 minutes. Brush both sides with honey-mustard sauce. Return to broiler and broil 2 more minutes on each side, or until medium rare.

Carve meat across the grain into thin slices. Serve with remaining sauce. Lamb can also be prepared on a barbecue grill.

Serves 4-5.
