Chilled Tomato and Red Pepper Soup

A fresh tomato soup. It takes only minutes to prepare. Use summer tomatoes at the peak of ripeness.

Ingredients

4 large ripe tomatoes, peeled, and cut into quarters
2 (12 oz) jars roasted red peppers, drained
3 Tablespoons GOLDEN BLOSSOM HONEY
2 Tablespoons fresh tarragon leaves
plain yogurt or sour cream

Directions

In a blender combine tomatoes and peppers until smooth. Add honey and tarragon leaves. Blend 30 seconds. Season with salt and pepper.

Cover and chill until ready to serve. Top with a dollop of plain yogurt or sour cream.
