Frosted Carrot Cake


A heavenly, moist cake with creamy icing!

Ingredients

1 1/2 sticks butter or margarine
1 cup GOLDEN BLOSSOM HONEY
2 eggs
1/2 cup orange juice
2 1/2 cups flour
1 1/2 teaspoons ground cinnamon
2 teaspoons baking soda
4 teaspoons baking powder
2 cups carrots, grated
1 1/4 cup raisins
1/2 cup coconut
1 cup pecans, chopped
Frosting:
8 ounces cream cheese, softened
1/2 cup GOLDEN BLOSSOM HONEY
1 teaspoon vanilla
1/4 cup confectioner's sugar
1/4 cup milk

Directions

Preheat oven to 350°.

Beat butter, honey, eggs and orange juice until thoroughly combined. Blend in dry ingredients, beating well. Add remaining ingredients and mix well.

Pour into a buttered 13x9x2" baking dish. Bake for 30 to 45 minutes or until wooden pick inserted in center comes out clean. Allow cake to cool before frosting.

Frosting:
Beat together all ingredients. Spread on cooled cake.
