Oatmeal With Apples and Toasted Walnuts

There is nothing as good as a hot bowl of cereal to start the day. Quick enough to make during the week but so special you can serve it to company.

Ingredients

Nuts:
1/4 cup walnuts, chopped
1 tablespoon GOLDEN BLOSSOM HONEY
Oatmeal:
2 cups old-fashioned oats
1 teaspoon salt
1 cup apple cider
1 cup Granny Smith apples, chopped
1/4 cup GOLDEN BLOSSOM HONEY
1/4 cup raisins
1/2 teaspoon ground cinnamon
low-fat vanilla yogurt

Directions

Nuts: Toast walnuts under broiler until just brown, about 3 minutes. Watch carefully so nuts do not burn. Remove from oven. Place in a small bowl. Drizzle with honey. Toss and set aside.

Oatmeal: Bring 3 cups of water to a boil. Add oats and salt. Simmer over medium heat, about 3 minutes. Stir in remaining ingredients, except yogurt. Cook an additional 3 minutes or until apples are tender.

Spoon oatmeal into bowls. Top with a dollop of vanilla yogurt, sprinkle with toasted nuts and serve.
